Amaranth (Kiwicha) is the mature and dry seed of the species Amaranthuscaudatus L. It has a spherical shape and a creamy yellow colour. There are more than 1,200 varieties of Amaranth plants in the Peru.
Our amaranth is the "Centenary" variety and its main feature is it is whiter than the others.
Amaranth belongs to the botanical group which include spinach and beets. However, the amaranth is high in starch, like many cereals, and has an outstanding nutrient profile due to its content of proteins and amino acids.
